    Note that because you are purchasing a portion of an individual animal, the amount of meat and cost will vary depending on how much your particular animal weighs— but you can anticipate it will be in the neighborhood of the numbers below.

  • Your first step is to reserve your beef by placing an order in our online store. We butcher monthly from April to November and occasionally at other times, but availability goes quickly so the sooner we know you are interested the better we are able to accommodate your request! If you want to reach out to us to ask questions before requesting a reservation, feel free to give us a text or call or shoot us an email with what’s on your mind.

    Once we receive your order, we will reach out within 24-48 hours to confirm a slaughter date as well as to send you a link to a google form that walks you through the details of your order. It can feel a little intimidating the first time through! We are happy to answer any questions that come up and you can also discuss with our butcher friends at Solar Meats.

    Typically we need your google form back by the time your animal goes to slaughter, when we pass it on to the butcher. They let your meat age well before processing it and contacting us for pickup— so it will be 2-4 weeks from the butcher date you picked to when the meat will be in your freezer, ready for you to enjoy. We typically receive your animal’s weight and can give you the final price at the time of pickup from the butcher and will let you know when we arrange delivery or pickup details.

  • A whole beef will typically fill 8 standard apple boxes or 14 cubic feet of freezer space

    A half beef will typically fill 4 standard apple boxes or 7 cubic feet of freezer space

    A quarter (split side) of beef will typically fill 2 standard apple boxes or 3.5 cubic feet of freezer space

  • We charge a single price that includes the butchering fees for your animal. This price is based on the hanging weight of your animal (the weight of the carcass, minus head and hooves, before being processed into meat).

    For our animals, this is an average of 620 lb for a whole, 310 lb for a half, or 155 lb for a quarter. Note that typically the boxed weight or meat that you put in the freezer will be around 55-60% of the hanging weight.

    Each animal is different so we won’t know the final weight/cost until after harvest— the numbers below would be typical but yours is likely to be a little more or a little less

    The butcher charges us about $1.20/lb of the hanging weight (the weight of the carcass minus head and hooves, before being processed into meat). For reference— our average is around 620 lb for a whole steer.

    This charge is included in your total cost paid to us— if you were buying a whole beef, at least $744 of your cost would be butcher fees but this could be more depending on the cuts you chose.

    We are happy to lessen hassle, confusion, and math by paying the butcher directly and ask that you keep this included cost in mind when comparing with other local beef options.

  • Good things come to those who wait!

    We will confirm a butcher date with you when you reserve your beef. The butcher will age your beef before processing it, so it will be 2-4 weeks after the butcher date when your beef is processed, packaged, and ready to hit your freezer.
